Suman sa ligia (Glutinous rice dumplings)

About this recipe: This popular street food snack is made from malagkit, otherwise known as glutinous or sticky rice, and lye.

  • 400g malagkit (glutinous rice)
  • 1 tablespoon wood ash lye
  • Banana leaves, wilted, as needed

  1. Soak malagkit in enough water to cover for several hours until the grains are swollen.
  2. Drain and wash the rice thoroughly. Add the lye and mix thoroughly.
  3. Wrap 4 tablespoons of rice in a double layer of banana leaves. Tie in pairs with the folds facing each other.
  4. Place the suman in a big pot, cover with water and boil for 2 to 3 hours, or until the rice is tender.
  5. Serve hot with sugar and grated coconut.
