Sisig (Sweet and sour pig's ears)

    This dish of pig's ears in a spicy, sweet and sour sauce is a perfect appetizer when people are drinking beer.

    Serves: 10 

    • 1kg pig's ears, scalded
    • 200ml (3/4 cup) water
    • 100ml (1/3 cup) white vinegar
    • 2 tablespoons sugar
    • 1 teaspoon salt
    • 1/4 teaspoon pepper
    • 1 green pepper (capsicum), cut into thin strips
    • 1 red pepper (capsicum), cut into thin strips
    • 1 large green chilli, seeded and sliced

    1. Cut the pig's ears into thin slices. In a large pot, boil for 10 minutes. Let cool.
    2. In a large bowl, combine the water, vinegar, sugar, salt, and pepper. Add the pig's ears and remaining ingredients and mix altogether. Keep refrigerated until ready to use.
