About this recipe: This prawn dish is is very easy to prepare and yet is flavorful. It also contains vegetables so you can serve it as a simple one-pot meal.

Serves: 6 

  • 1kg prawns
  • 500ml (2 cups) water
  • Salt to taste
  • 250g string beans
  • 1 large eggplant, chopped
  • 1 bunch pek chai, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon atsuete (annatto) powder, for color
  • 3 tablespoons peanut butter

  1. In a large pot, boil the prawns in water with salt for 5 minutes. Remove the prawns and set aside.
  2. In the same water, cook the string beans, eggplant and pek chai in the same water for 3 minutes, or until the vegetables are done. Drain and reserve the liquid.
  3. In a large frying pan, saute the onion and garlic with the olive oil. Add the atsuete powder and mix thoroughly to produce an orange-red color.
  4. Add the peanut butter and continue mixing until well blended.
  5. Add the water used to boil the prawns and vegetables. Mix thoroughly and boil for 3 minutes.
  6. Add all the vegetables and the prawns. Mix well and let boil for 2 minutes.
  7. Serve hot with rice.
