    This is a heart healthy vegetable dish that can be served as an everyday dish or when you have company. Since it also contains pork and prawns, you can eat it as a one-pot meal.

    Serves: 6 

    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 3 tablespoons olive oil
    • 225g pork, chopped
    • 225g prawns, deveined
    • Salt and pepper to taste
    • 1 medium tomato, chopped
    • 115g squash, seeds removed and cut into bite sized pieces.
    • 115g ladies fingers/okra, ends cut off
    • 115g French beans, trimmed and cut in half
    • 115 eggplant (brinjal), cut into bite sized pieces
    • 1 small bitter melon, cut into bite sized pieces

    1. In a large pot, saute the onion and garlic in olive oil. Add the pork and cook until it is no longer pink. Add the shrimp, and salt and pepper to taste. Cook for 5 minutes.
    2. Add the tomato, cover and cook for 5 minutes. Add all the vegetables, mix well, and cook for another 10 minutes or until all vegetables are just soft to the touch.
    3. Serve with rice.
