    A simple and delicious dessert of corn pudding made with canned cream of corn and rice flour.

    Serves: 10 

    • 400 ml (1 2/3 cups) coconut milk, divided
    • 1 (420g) can cream of corn
    • 120g rice flour
    • 200g white sugar
    • Latik

    Prep:5min  ›  Cook:30min  ›  Ready in:35min 

    1. Mix the coconut milk, cream of corn, rice flour and sugar in a non-stick pot.
    2. Mix thoroughly and cook over medium heat until thick, stirring constantly to prevent mixture from sticking to the bottom of the pot.
    3. Pour into a serving platter with ridges or a tray and let cool. Garnish with latik and serve.

    I made this recipe for my Filipino wife last night. It was so easy and so delicious. The left overs were even better tonight! My wife loved it and said that it tasted just like her mom's. I didn't have the ingredients on hand to make latik, so I spread sweetened shredded coconut on top and browned it under the broiler for a few minutes.
