Fresh Lumpia

    This is a delightful meal-in-one favorite. Caramelised onion adds sweetness, and peanuts add crunch to the filling.

    Serves: 15 

    • 1 medium onion, chopped
    • 2 cloves garlic, crushed
    • 2 tablespoons olive oil
    • 500g lean pork, sliced into small pieces
    • 500g fresh prawns, deveined and chopped
    • 2 stalks celery, diced
    • 100g fresh French beans
    • 165g chickpeas
    • 160 crushed salted peanuts
    • 1/2 small singkamas (yambean), cut into matchsticks
    • 100g bean sprouts
    • 1 large carrot, diced small
    • 1 package fresh lumpia wrappers
    • Fresh lettuce leaves

    1. Saute the onion and garlic in olive oil until the onion is caramelised. Set aside.
    2. In the same skillet, saute the pork and prawns. Then add the onion and garlic mixture and salt and pepper to taste.
    3. Add all the vegetables and mix thoroughly. Cook for about 5 minutes or until the vegetables are done.
    4. Place the filling mixture in a large mixing bowl. Add the peanuts and mix well.
    5. To wrap the lumpia, first place a lettuce leaf on the wrapper. Then place 1 tablespoon of the fillling on top of the lettuce. Roll the wrapper, folding one end over so the filling does not fall out. Place on a serving platter.
    6. Repeat until all the filling or all the wrappers are finished. Serve with fresh lumpia sauce (link to recipe).
