Lechon (Roasted Pork Leg)

    Pork leg is roasted slowly in the oven to produce moist and tasty meat. Top it with lechon sauce (link to recipe).

    Serves: 10 

    • 3 kg fresh pork leg with skin
    • Butter
    • Salt to rub on the skin of pork
    • 250ml (1 cup) water

    1. Rinse pork. Pat dry with paper towels. Rub butter all over the skin. Sprinkle salt over the skin surface.
    2. Place pork on a rack in a roasting pan. Pour water into the bottom of the pan. Cover the pan securely with aluminum foil so steam will not escape.
    3. Roast at 200 C for 30 minutes. Remove foil.
    4. Continue roasting uncovered at 160 C for 3.5 hours, basting with the drippings every 30 minutes. Pork skin should be crisp.
    5. Insert thermometer into the meaty portion without touching the bone. Pork is well done when thermometer reads 80 C.
    6. Place pork leg on a serving platter. Slice bite sized portions and eat with lechon sauce.
