Latik (Fried coconut milk curd)
Latik is usually made from the first squeezing of freshly grated mature coconut. It is used as a topping for many desserts. For a shortcut, use canned coconut milk.

500ml (2 cups) freshly grated mature coconut
500ml (2 cups) warm water
- Mix grated coconut with warm water and express as much coconut juice as possible. Strain juice into a non-stick skillet.
- Boil until the mixture is dry. Mixture will curdle as it dries into coconut oil and solids which are called latik.
