The coconut milk in this dish gives the catfish a very savory taste.

    2. Saute the garlic and onion in cooking oil until garlic is light brown and onion is glossy. Add the catfish and salt and pepper, mix and cover. Cook 2 minutes.
    3. Add the coconut milk and mix. Cover and cook another 10 minutes or until the coconut turns oily.

Yummy and Easy!!!! Would be great with Jasmine Rice. I added fresh grated ginger and about 1 Tablespoon brown sugar.  -  13 Jun 2010  (Review from Allrecipes US | Canada)

I loved it! Of course I had to add some additional seasonings (garlic, cayenne pepper and lemon pepper) but it was good... also added some cilantro and squeezed some lemon as well..yummm!!!  -  02 Jun 2010  (Review from Allrecipes US | Canada)

Another 5 stars because my family really enjoyed how the catfish was cooked in this recipe. The only change I made was instead of using cooking oil I used butter. Just a personnel preference over cooking oil for this recipe. Not having used coconut milk for much cooking this was a delightfully light, aromatic and delicious fish recipe. I paired with a Trader Joe's Harvest Grains and frozen peas. Yum! This one is in the recipe box  -  14 Jan 2012  (Review from Allrecipes US | Canada)
