Guinataan Sitaw and Kalabasa (String beans and squash stew)

    In this one pot meal of string beans, squash, pork and prawns, the coconut milk adds richness and flavour.

    Serves: 6 

    • 500ml (2 cups) thin coconut milk
    • 2 tbsp bagoong (shrimp paste)
    • 1 medium onion, chopped
    • 1 thumb-sized ginger, sliced thin crosswise
    • 250g pork, sliced into bite-sized pieces
    • 250g prawns, deveined
    • 1/2 kg string beans, cut into 5 cm pieces
    • 1/2 kg squash, peeled and cut into 2 cm cubes
    • 1 hot green chilli
    • 250ml (1 cup) thick coconut milk

    1. In a large pot, mix the thin coconut milk with bagoong, onion and ginger. Add the pork and boil for 5 minutes.
    2. Add the prawns and cook, covered, for 2 minutes. Add the string beans, squash and chilli. Cover and cook for 10 minutes or until the mixture is almost dry.
    3. Add the thick coconut milk, mix and continue cooking until almost all liquid has dried up. Serve hot with rice.
