Fried Tulingan (Mackerel)

    Mackerel is first simmered in a tangy tamarind base and then fried or grilled. It is important that the fish is fresh.

    Serves: 4 

    • 1 medium-sized fresh mackerel
    • 500 ml water
    • 1 tbsp tamarind powder
    • 1 tsp fish sauce
    • Oil for frying

    Prep:20min  ›  Cook:40min  ›  Extra time:1hr  ›  Ready in:2hr 

    1. Clean the fish by removing the guts, gills, etc.
    2. Put the fish and remaining ingredients, except oil, in a medium-sized pot. Cover and simmer for about 15 minutes.
    3. Turn the fish over and cook for another 15 minutes. Let sit in the broth for 1 hour or more.
    4. Heat the oil in a non-stick skillet. Fry the fish until brown on both sides or wrap in banana leaves and grill. Serve with mango relish.
