Tortang Talong (Eggplant tortang)

    This eggplant and egg dish is easy to make and a great side dish for an everyday meal.

    Serves: 3 

    • 6 long eggplant (brinjal)
    • 3 eggs
    • Salt to taste
    • Cooking oil as needed for frying

    1. Broil eggplant or grill over live coals to loosen the skin. Let cool.
    2. When cooled, remove the skin. Mash the flesh by running a fork through it but leave the cap intact.
    3. Beat eggs until frothy. Add salt to taste.
    4. Heat enough cooking oil to cover the bottom of frying pan. Dip the eggplants one by one in the beaten egg and fry in cooking oil until brown. Turn over once only. Serve hot.
