About this recipe: This a delectable pork dish you can make for any day of the week although it takes time to cook it.

Serves: 4 

  • 1 pork leg (pata) with skin
  • 4 litres (16 cups) water for boiling
  • 1 tbsp salt
  • Oil for frying
  • 125ml (1/2 cup) vinegar
  • 2 cloves garlic, mashed
  • Salt and pepper to taste

  1. Boil the pork leg in water with salt until tender, about 1 hour. Pat dry and let cool in the refrigerator or overnight.
  2. In a deep-fryer or wok, heat oil and fry pork until skin puffs up.The crunchy, puffed-up skin is the best part.
  3. To make the dipping sauce, mix vinegar with mashed garlic and season with salt and pepper.
