    About this recipe: This chicken dish is a delight even to any discriminating taste.

    Serves: 4 

    • 1 kg chicken pieces (legs, thighs, wings)
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • Olive oil
    • 1 tbsp oyster sauce
    • Salt and pepper to taste
    • 1 medium tomato, diced
    • 1 carrot, sliced crosswise
    • 2 stalks celery, sliced crosswise
    • 1/2 kg chicharo (sweet peas)

    1. Wash chicken pieces and pat dry.
    2. Saute onion and garlic in olive oil until fragrant. Add oyster sauce and mix thoroughly. Add salt and pepper to taste.
    3. Add chicken and mix. Cover and cook for 5 minutes.
    4. Add tomato, carrot and celery. Cover and cook another 5 minutes. Add chicharo, mix and cook just until crisp but not too soft.
    5. Add the corn flour slurry and cook briefly until the sauce thickens. Serve hot with rice.
