Chicken Arroz Caldo (Chicken Rice Porridge)

About this recipe: This is a soupy dish that is served mainly for a snack.

Serves: 5 

  • 1 kg chicken wings
  • 1 cup sweet rice (malagkit)
  • 1 medium onion diced
  • 2 cloves garlic, crushed
  • 1 thumb sized piece of ginger, sliced thin crosswise
  • 2 tbsp olive oil
  • 1 tbsp fish sauce, plus more to serve
  • 1.25 litres chicken broth
  • salt and pepper to taste
  • 1 spring onion, chopped
  • 1 lemon, sliced

  1. Cut chicken wings into two at the large joint. Cut wing tip off. Rinse and pat dry with paper towel.
  2. In a large pot over medium heat, saute onion, garlic and ginger in olive oil. Add chicken wings. sauté 1 minute, then add fish sauce and cover.
  3. Cook another 2 minutes, add chicken broth and sweet rice. Cover pot and let boil 10 minutes, stirring occasionally to make sure rice is not sticking to the bottom of pot. Add salt and pepper to taste.
  4. Serve hot, garnished with spring onion. If desired, serve with more fish sauce and lemon slices.
