Chicken Adobo

    This is a family favourite and is served over rice. Easy to prepare especially when you are in a hurry.

    Serves: 6 

    • 2 kilograms chicken legs and thighs
    • 175 ml water
    • 175 ml white vinegar
    • 60 ml soya sauce
    • 1 tsp sugar
    • 1 medium onion, chopped
    • 2 garlic cloves, crushed
    • 1 tsp whole peppercorn, crushed
    • 2 bay leaves
    • salt to taste

    1. Rinse chicken and pat dry with paper towel. Place in a 6 litre pot.
    2. Pour water, vinegar, soya sauce, and sugar into the same pot. Add the onion, garlic, peppercorns and bay leaves.
    3. Bring to a boil for at least 2 minutes, then cook over low heat for 30 minutes. Remove chicken from pot when cooked, leaving the liquid to simmer until it thickens. Add salt to taste.
    4. Return chicken to the pot and mix to coat the chicken with the sauce. Continue cooking for 3 minutes. Serve with rice.
