About this recipe:
This is a family favourite and is served over rice. Easy to prepare especially when you are in a hurry.
2 kilograms chicken legs and thighs
175 ml water
175 ml white vinegar
60 ml soya sauce
1 tsp sugar
1 medium onion, chopped
2 garlic cloves, crushed
1 tsp whole peppercorn, crushed
2 bay leaves
salt to taste
- Rinse chicken and pat dry with paper towel. Place in a 6 litre pot.
- Pour water, vinegar, soya sauce, and sugar into the same pot. Add the onion, garlic, peppercorns and bay leaves.
- Bring to a boil for at least 2 minutes, then cook over low heat for 30 minutes. Remove chicken from pot when cooked, leaving the liquid to simmer until it thickens. Add salt to taste.
- Return chicken to the pot and mix to coat the chicken with the sauce. Continue cooking for 3 minutes. Serve with rice.
