About this recipe:Just tried this today and thought I'd share. I served it with plain rice, but I'm sure it'd be nice with roasted potatoes and fresh vegetables as well! I have a large family with lots of little children who only eat small portions (this fed 2 adults, 5 children and 1 baby).
2 cloves of garlic, minced
few sprigs of fresh oregano
sprinkle of salt
sprinkle of pepper
sprinkle of your choice dried herbs (rosemary, thyme, tarragon, etc.)
Place a few sprigs of fresh oregano and the minced garlic inside the chicken's cavity.
Place the chicken in the slow cooker, rub with butter and sprinkle with salt, pepper and dried herbs.
Grate some lemon rind over the chicken, then slice the lemon in half and squeeze the juice over the chicken. I then placed half the lemon in the slow cooker with the chicken. Leave to cook on Low for 6 hours.
