Chicken Cannelloni (Italian Style)

    This is a dish that you can put in anything you like. It is great for hiding veggies for kids. They love it. because it is chopped up small they don't really notice. Be adventurous. Substitute for your fave ingredients. Use what you have in the fridge.

    Serves: 8 

    • 1 cooked whole chicken (I usually grab a cooked chicken from the supermarket), deboned and cut into small pieces
    • 2 boxes cannelloni shells
    • 1 large carton thickened cream
    • 1 diced onion
    • 2 sticks diced celery
    • 140g diced mushrooms
    • 2 diced carrot
    • 1 capsicum
    • Garlic to taste
    • Basil to taste
    • Mixed herbs to taste
    • 1 bottle pasta sauce of your choice
    • 250ml red wine (optional hehe)
    • 250ml water
    • 500g mozzarella cheese

    1. Preheat oven to 180 C.
    2. In a large mixing bowl, mix together well the chicken, cream, onion, celery, mushrooms, carrot, capsicum, garlic, herbs and basil.
    3. In a separate bowl mix the pasta sauce and wine together.
    4. Now the fun part - get the kids involved they will love it! Stuff the cannelloni shells with the chicken mix.
    5. In a large dish, place 1 layer of stuffed cannelloni shells. Pour over water and half of the pasta sauce mix. Add another layer of cannelloni shells, pour over remaining sauce mix.
    6. Spread cheese over the top and cover the dish with aluminium foil. Cook for 40 mins or until the cannelloni is soft.
    7. I like to uncover the dish for the last 10 mins to brown the cheese.
    8. Serve with salad or just by itself.

    What a great recipe. My family loved it. Used 600ml thickened cream to make sure the mix was sloppy. Also I put the skin and wing tips from the BBQ chicken in some hot water while I broke up the chicken then added one cup of the cooled chicken skin water instead of the plain water.
