    About this recipe: Yes, I know you can just mix together sweet chilli sauce and fish sauce and call it a dipping sauce - or you can make this one! Good for fish cakes and spring rolls.

    Ingredients
    Serves: 6 

    • 100g white sugar
    • 60ml coconut vinegar or white vinegar
    • 60ml water
    • 1 tablespoon fish sauce
    • 1 tablespoon sweet chilli sauce
    • 1/2 bunch coriander, chopped
    • pinch of salt
    • 1 cucumber, finely chopped
    • 2 spring onions, finely chopped
    • 2 red chillies, seeds removed and finely chopped

    Directions

    1. Heat the sugar, vinegar and water in a saucepan till the sugar is melted. remove from the stove and let cool a bit.
    2. Stir in all the remaining ingredients and pour into a good sized bowl to make dipping easy.
