    About this recipe: This is a brilliant, low-cost recipe, No eggs, sugar, milk, or butter. You can even use diabetic chocolate. A nice moist cake, it will keep for approx 3-4 weeks and is delicious with your favorite icing.

    Serves: 30 

    • 1kg mixed fruit
    • 150g fruit & nut chocolate bar, chopped
    • 240g self-raising flour
    • 500ml strong black coffee (or orange juice)

    1. Soak fruit overnight in black coffee (instant is okay). Next day, add chopped chocolate, self-raising flour, and mix well.
    2. Line and grease bottom and sides of a round 22 or 28cm cake tin. Preheat oven to 150 degrees C.
    3. Bake the cake in preheated oven for 1¾ hr to 2 hrs. Test if cooked at 1½ hrs.
