Vikki's quick and easy Spinach and Ricotta Cannelloni

About this recipe: This is a simple easy way to make cannelloni. I found using the tubular shells they crack very easy when trying to fill them. Fresh lasagna sheets make this recipe very simple.


Serves: 4 

  • 3-4 fresh lasagne sheets
  • 1 medium onion
  • 1 clove garlic
  • 250g smoked bacon pieces
  • 6 medium mushrooms diced
  • 2 cups cooked spinach
  • 500g Ricotta cheese
  • 2 x 210g cans chopped tomatoes with Italian basil & garlic (or just plain tomatoes)
  • grated cheese

Prep:15min  ›  Cook:45min  ›  Ready in:1hr 

  1. Preheat oven to 180 degrees C.
  2. Cook onion and garlic. Add bacon and cook for approx 3 minutes. Add diced mushrooms and cook until soft. Add cooked, drained spinach and mix well.
  3. Take off the heat and mix in ricotta cheese. Set aside.
  4. Cut lasagne sheets to size if needed. Spoon mixture across length of fresh pasta sheets and roll. Place into well greased lasagne dish. Continue till all mixture is used. Top rolled sheets with chopped tomatoes and then grated cheese and bake in the pre-heated oven for approx 30minutes or until hot.
