    About this recipe: Tomatoes in season are $1Kg - buy 10Kg and experiment!

    Ingredients
    Serves: 8 

    • 2kg ripe tomatoes, cut in half
    • 1/2 cup (125ml) olive oil
    • 1 tbs salt
    • 1 tbs cracked black pepper
    • I knob garlic
    • handful of chillies, whole
    • Balsamic vinegar, good sprinkling
    • Caster Sugar

    1. Preheat oven to 200°C (180°C for fan forced). Use big baking dish, swish around tomato halves in all ingredients except sugar then arrange tomatoes cut side up and sprinkle each tomato with a little sugar. Bake in oven for 1 hour. Puree all and sieve out seeds and skins. Pour into sterilized jars. Serve with pasta.
