Chicken with Garlic, Italian Basil, and Parsley

    VERY easy! Baked chicken breasts seasoned with garlic, parsley, basil, tomato and chilli flakes. A simple dinner.

    Ingredients
    Serves: 4 

    • 1 tablespoon dried parsley, divided
    • 1 tablespoon dried Italian basil, divided
    • 4 skinless, boneless chicken breast halves
    • 4 cloves garlic, thinly sliced
    • 1/2 teaspoon salt
    • 1/2 teaspoon chilli flakes
    • 2 tomatoes, sliced

    Directions
    Prep:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Preheat oven to 180 degrees C. Grease a 22x33cm baking dish.
    2. Sprinkle 1 teaspoon parsley and 1 teaspoon basil evenly over the bottom of the baking dish. Arrange chicken breast halves in the dish, and sprinkle evenly with garlic slices. In a small bowl, mix together the remaining parsley, the remaining basil, the salt and chilli flakes; sprinkle over the chicken. Top with tomato slices.
    3. Bake covered in the preheated oven 25 minutes. Remove cover and continue baking 15 minutes, or until chicken juices run clear.

    This recipe was an instant family hit and is now a favourite. In the last 20 minutes I top it with diced tomatoes, fresh basil and feta cheese. The only other thing I would strongly recomend is to brown the chicken beforehand so that it doesn't look so pale on the plate.  -  06 May 2006  (Review from Allrecipes US | Canada)

    Very very easy and good! I drizzled a little bit of balsamic vinegar on top before baking then added some mozzarella during the last 15 minutes of baking. Turned out very juicy.  -  30 May 2007  (Review from Allrecipes US | Canada)

    We loved this flavorful and healthy dish. I used fresh basil, but got lazy and used dried minced garlic. It was very moist and tender. Unlike others, we had no desire to add the extra calories and fat of a cheese topping. Next time, I might sprinkle a little extra salt, basil, and parsley on top of the tomato slices.
