Hot and sour tofu soup (Suan la dofu tang)

About this recipe: This is a central Chinese version of a hot and sour soup that will warm your heart and your palate without sending you on a hunt for ingredients.


Serves: 2 

  • 4 cups (1L) vegetable stock
  • 375g silken tofu, diced
  • 2 shallots, chopped
  • 1 egg, beaten
  • 3 shiitake mushrooms, sliced
  • 2 cups chopped cabbage
  • 1 teaspoon chilli sauce (or to taste)
  • 1 tablespoon (15ml) rice vinegar
  • 3 tablespoons (45ml) soya sauce

  1. Place the stock into a saucepan, and bring to a simmer over medium-low heat. Add tofu and green onions. Slowly drizzle in the beaten egg to make long strands of egg. Add mushrooms and cabbage, and simmer for 5 minutes.
  2. Remove from heat, and season with chilli sauce, vinegar and soya sauce.
