Chilled Rockmelon Soup

    A very refreshing fruit soup, served chilled. Great for lunchtime parties. Garnish with mint if desired.

    Serves: 6 

    • 1 rockmelon, peeled, seeded and diced
    • 500ml (2 cups) orange juice
    • 1/2 lime, juiced
    • 1/4 teaspoon ground cinnamon

    1. Place rockmelon and half the orange juice in a blender and process until smooth. Transfer to large serving bowl. Stir in lime juice, cinnamon and remaining orange juice. Cover, and refrigerate for at least one hour.
    2. Garnish with mint if desired.

    Did not care for this. It smelled good but the consistency we didn't care for. Also, we didn't find it to be sweet enough. I am sure you could add some sugar to remedy this. It was easy to make however, just not for us.  -  12 Sep 2002  (Review from Allrecipes US | Canada)
