Chicken, White Wine and Vegetable Soup

About this recipe: The ultimate rainy day warmer. Chicken, white wine and a multitude of vegetables simmer until the vegetables are cooked to your liking. Use a half a chicken, a whole small chicken or chicken pieces.

Serves: 10 

  • 1/2 whole chicken, bone in
  • 2 parsnips, peeled and chopped
  • 1 medium head garlic, peeled and chopped
  • 2 large onions, peeled and chopped
  • 5 carrots, scraped and chopped
  • 2 courgette chopped
  • handful chopped fresh parsley
  • 2 stalks celery, chopped
  • 2 potatoes, peeled and diced
  • 1 sweet potato, peeled and diced
  • 1 vegetable stock cube
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika
  • 2 litres (7cups water) water
  • 325ml (1/2 bottle) dry white wine
  • salt and freshly ground black pepper to taste

Prep:20min  ›  Cook:2hr  ›  Extra time:40min  ›  Ready in:3hr 

  1. In a large soup pot, combine all ingredients. Cover and bring to a boil and then gently simmer for 1 1/2 - 2 hours.
  2. Remove chicken from pot and allow to cool enough to be easily handled. Pull chicken meat from the bone; discard bones and return chicken pieces to the pot.

This is my first time to taste a chicken soup with white wine. Not bad after all. Will definitely make this every now and then. There are other chicken broth recipe that you might like, it's at - 22 Dec 2011
