Broccoli with garlic butter and cashews

    A new recipe a neighbour gave us. What a hit with my family! Just the right mix of garlic and cashews with our favorite veggie, broccoli. And so easy to make.

    Serves: 6 

    • 750g broccoli, cut into bite size pieces
    • 85g butter
    • 1 teaspoon brown sugar (more or less to taste)
    • 3 tablespoons (45ml) soya sauce
    • 2 teaspoons (10ml) white vinegar
    • 1/4 teaspoon ground black pepper
    • 2 cloves garlic, minced
    • 80g chopped salted cashews

    1. Steam or boil the broccoli till tender but still crisp-about 7 mins. Drain, and arrange broccoli on a serving platter.
    2. While the broccoli is cooking, melt the butter in a small frypan or pot over medium heat. Mix in the brown sugar, soya sauce, vinegar, pepper and garlic. Bring to a boil (make sure it doesn’t burn) then remove from the heat.
    3. Mix in the cashews, and pour the garlic butter sauce over the broccoli. Serve immediately.

    This is a good recipe. The broccoli is tasty, but my husband thought there was too little sauce. The cashews tasted great with the sauce. Try toasting the cashews (375 degrees for 8-10 minutes on a cookie sheet) first.  -  01 Jun 2006  (Review from Allrecipes US | Canada)


    We liked this recipe. I did cut back on the butter (used half the recommended) but followed everything else in recipe. I think next time I will saute the garlic in the butter a bit before adding the remaining ingredients for the sauce. Also, I will allow the sauce contents to boil for a couple of minutes to allow the sauce to thicken a bit so that it will stick to the broccoli a bit better.
