About this recipe: You can use anything you like to stuff the chicken, possibilities are endless.


Serves: 3 

  • 6 large boneless chicken thighs
  • 6 smoked bacon rashers/slices (30g)
  • 2 cloves garlic
  • fresh sage, thyme and Italian basil
  • salt and pepper

Prep:30min  ›  Cook:1hr  ›  Ready in:1hr30min 

  1. Lay chicken thighs skin side down on a board. Using a meat mallet, gently pound chicken.
  2. Chop fresh herbs and garlic and liberally sprinkle onto chicken.
  3. Roll chicken thighs up and wrap with bacon rasher.
  4. Secure with a skewer and cook in a moderate oven for 1 hr.
