Anna's Favorite Chocolate Cake

About this recipe: This is a wonderful celebration cake-chocolate and cream. You can prepare the syrup before you start the cake and let it cool.


Serves: 12 

  • 4 tablespoons margarine
  • 1 cup sugar
  • 4 eggs
  • 2 cups self-raising flour
  • 3 teaspoons baking powder
  • 2 tablespoons cocoa
  • 2 tablespoons drinking chocolate
  • 1/2 teaspoon vanilla
  • 1/4 cup brandy
  • syrup
  • 1/2 cup water
  • 1 cup sugar
  • 1/2 cup milk
  • decoration
  • 500g fresh cream
  • 1 tablespoon icing sugar
  • 1/2 teaspoon vanilla
  • glace cherries & walnuts -- optional

  1. Preheat oven to 180 degrees C.
  2. Beat sugar with margarine until fluffy. Sift all dry ingredient together. Add eggs one by one then add the sifted dry ingredients , vanilla & brandy.
  3. Put in a well greased baking dish or cake tin of your choice. You might have to line it with greaseproof paper. (It depends from your dish)
  4. Bake in preheated oven 180 degrees C for about 45 minutes.
  5. When cool you cut across though the middle, lengthways.
  6. To make the syrup: boil water & sugar for 10 minutes, cool & add the milk.
  7. To make the cream topping: whip together with sugar & vanilla.
  8. Sprinkle the bottom piece with syrup and cover with the whipped cream. Sprinkle the top piece of cake with syrup and put it on top of the cream.
  9. Cover the whole cake with the rest of the cream (you can add some cocoa if you want to give it the chocolate color) and decorate with the cherries & walnuts.
