Serves: 2 

  • 600ml milk
  • 60g butter
  • 60g plain flour
  • ½ tsp mustard
  • seasoning-salt and pepper to taste
  • 60 - 90g any cheese - grated or crumbled
  • 200g macaroni
  • 1 tin tomatoes (optional)

  1. Cook macaroni pasta then put aside.
  2. Add everything except the cheese, tomatoes and pasta in a saucepan. Simmer for 10 - 12 minutes whisking occasionally. Stir till thickened.
  3. Stir in the cheese, tomatoes (if required) and simmer till heated through and cheese is melted, then add the pasta to warm sauce. Season to taste and cook till heated through.
  4. If too thick, thin down with a little more milk. For a thinner sauce add less milk
