    About this recipe: The unbeatable bean is a great low-fat, high-fibre protein source that's rich in folate (and other B vitamins) as well as minerals, including iron, potassium and magnesium.

    Ingredients
    Serves: 6 

    • 2 cans (375g each) cannellini beans, drained and rinsed
    • 1 can (425g) water-packed tuna, drained
    • 1 red onion, sliced
    • 1/4 cup olive oil
    • 3 teaspoons lemon juice
    • 1 tablespoon fresh sage leaves
    • 1 tablespoon chopped fresh parsley

    1. Toss the beans, tuna, onion, oil, lemon juice and sage leaves together in a large serving bowl.
    2. Sprinkle with the chopped parsley just before serving.
