About this recipe: Eaten without the skin, turkey makes a healthy, tasty meal. Turkey breast is the leanest of meats, and its mild flavour makes it a versatile ingredient. It also supplies high-quality protein and B vitamins.

Serves: 4 

  • 1/4 cup low-fat mayonnaise
  • 1 1/2 tablespoons lemon juice
  • 2 tablespoons grated Parmesan cheese
  • 1 medium cos lettuce, leaves roughly torn
  • 250g cooked turkey breast, diced
  • 1 cup oven-roasted croutons
  • 6 anchovy fillets, finely diced
  • 2 teaspoons capers, rinsed

  1. Combine the mayonnaise, lemon juice and Parmesan in a large serving bowl. Toss with the lettuce, turkey, croutons, anchovies and capers.
