Sweet potato mash with cinnamon & maple syrup

    Serves: 6 

    • 1 kg sweet potatoes, peeled and chopped
    • ½ teaspoon salt
    • 1 cinnamon stick
    • 2 tablespoons maple syrup
    • 1½ tablespoons butter or vegetable oil

    1. Combine sweet potato, salt and the cinnamon in a medium saucepan with just enough water to cover. Boil, uncovered, stirring occasionally, until potato is tender, about 20 minutes. Drain. Discard cinnamon stick.
    2. Return potato to pan. Add 1½ tbsp maple syrup and all the butter. Mash. Serve drizzled with the remaining maple syrup.
