About this recipe: Juicy, tender spinach has a natural affinity with sesame and the the leaves look great flecked with the sesame seeds.

Serves: 4 

  • 1 bunch spinach, about 500 g, thick stems removed
  • pinch of chilli flakes
  • 2 teaspoons sesame oil
  • ½ teaspoon salt
  • 1 teaspoon lemon juice
  • 1 tablespoon sesame seeds, toasted

  1. Wash the spinach, then put it in a saucepan with just the water clinging to the leaves from washing. Add the chilli flakes and cook gently for 3–5 minutes until just wilted. Drain thoroughly, then transfer to a serving bowl.
  2. Sprinkle the spinach with the sesame oil, salt and lemon juice and toss to mix. Sprinkle with toasted sesame seeds, then serve at once.
