    About this recipe: I came up with this as I was trying to use things I had on hand. I have fresh dill growing on my balcony, which was the key inspiration for this gorgeous version of chicken salad.

    Serves: 5 

    • 1/2 cup mayonnaise
    • 2 tablespoons (30ml) cider vinegar
    • 2 cloves garlic, crushed
    • 3 tablespoons chopped fresh dill
    • 500g skinless, boneless chicken breast fillets, cooked and diced
    • 1 red capsicum, chopped
    • 30g crumbled feta

    1. Combine mayonnaise, vinegar, garlic and dill.
    2. Refrigerate for several hours or overnight.
    3. Mix together chicken, capsicum and feta.
    4. Add chilled mayonnaise and mix well.
    5. Serve as a sandwich filling or over a bed of crisp green salad.
