    About this recipe: Potatoes combine energy-giving complex carbohydrates with plenty of vitamin C, fibre and potassium. They're filling and, if sensibly prepared, low in fat.

    Ingredients
    Serves: 4 

    • 1 1/2 tablespoons vegetable oil
    • 4 cloves garlic, unpeeled
    • 1 tablespoon fresh rosemary leaves
    • 1kg small red potatoes, quartered
    • Rock salt

    1. Preheat the oven to 210°C. Pour the oil into a 23 x 33 cm baking dish. Add the garlic and rosemary. Heat for 5 minutes in the oven.
    2. Add the potatoes; cook, tossing occasionally, for 50 minutes or until done. Sprinkle with the salt to taste.
