Jamaican Barbecued Chicken

    An easy homemade Jamaican jerk sauce of soya, lime, orange juice and lots of spices makes a mouthwatering marinade for barbecued chicken.

    Ingredients
    Serves: 3 

    • 1 spring onion, finely chopped
    • 4 tablespoons (60ml) orange juice
    • 1 tablespoon finely grated fresh ginger
    • 1 tablespoon finely chopped green chilli
    • 1 tablespoon (15ml) lime juice
    • 1 tablespoon soya sauce
    • 1 clove garlic, crushed
    • 1 teaspoon ground allspice
    • 1/4 teaspoon ground cinnamon
    • 1/2 teaspoon ground cloves
    • 1 whole chicken, cut into pieces

    Directions
    Prep:10min  ›  Cook:30min  ›  Extra time:8hr20min  ›  Ready in:9hr 

    1. Combine spring onions, orange juice, ginger, chilli, lime juice, soy sauce, garlic, allspice, cinnamon and cloves.
    2. Add chicken, and marinate for 8 hours.
    3. Preheat barbecue for medium heat.
    4. Cook chicken until juices run clear, and drizzle with leftover marinade that has been boiled for 2 to 3 minutes.

    This isn't bad but let me give you guys a little tip. You don't have to use all these ingredients to get jerk chicken. All you have to use is jerk seasoning, onion, thyme, a few pimento seedsand hot peppers. Just add enough powder seasoning that will give it taste. Then use a fork to put some holes in the chicken so that the inside of the chicken can soak up some of the seasoning. Preferably leave it over night in the fridge so that it can marinate and taste better. Then take it out about 30mins prior to cooking then just put it on the grill for about up to and hour or less.     When I first tasted this, I thought there was too much cinnamon. I was wrong, it is just right! More than one tablespoon fresh jalapeno pepper should be used. Also, instead of orange juice, I used orange juice concentrate for a more intense orange flavor. That worked really well!  -  25 Jul 2005  (Review from Allrecipes US | Canada)
