Penne with sugar snap peas and smoked salmon

    Fresh peas are a good, low-fat protein source. They are all rich in vitamin C, while green peas also contain folate and thiamin. Pea pods offer measurable potassium.

    Serves: 4 

    • 375g penne pasta
    • 500g snow peas, strings removed
    • 1 tablespoon chopped fresh dill
    • 3 spring onions, thinly sliced
    • 1/4 cup olive oil
    • 1 teaspoon grated lemon zest
    • 2 tablespoons lemon juice
    • 125g smoked salmon, slivered
    • Freshly ground black pepper

    1. Cook the pasta in a large saucepan of boiling water according to the packet directions, until firm-tender. Add the peas to the water during the final 1 minute of cooking; drain.
    2. Meanwhile, combine the dill, spring onions, oil, lemon zest and lemon juice in a large bowl. Add the hot pasta and the peas, tossing well. Add the smoked salmon and a good grinding of pepper, then toss again.

    Lovely fragrant and tasty pasta, very easy to make. I didn't have any smoked salmon so I used a can of salmon which worked just as well. will be making it again  -  27 Mar 2013  (Review from Allrecipes AU | NZ)
