Fresh tomato salsa

    Serve this salsa fresca on its own with tortilla chips or as an accompaniment to Mexican dishes.

    Serves: 12 

    • 500 g ripe tomatoes
    • 4 spring onions, sliced finely
    • 1/2 cup chopped fresh coriander
    • 1/4 cup chopped fresh mint
    • 1 small red chilli, finely chopped
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon ground cumin
    • 1/4 cup lime juice

    1. Cut the tomatoes in half and remove the seeds. Dice the flesh and place in a medium bowl along with the spring onions, fresh coriander, mint, chilli, ground coriander, cumin and lime juice.
    2. Stir to combine, then stand for 30 minutes to allow the flavours to develop.
