About this recipe: Try this chopped tomato salad, flavoured with cumin, coriander, chillies, fresh coriander and mint, as a cool accompaniment to spicy curries.

Serves: 4 

  • 3 medium tomatoes (about 500 g)
  • 4 spring onions, finely sliced
  • 1/2 cup (30 g) chopped fresh coriander leaves
  • 3 tablespoons chopped fresh mint leaves
  • 2 small red chillies, seeds removed, finely chopped
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 cup lime juice
  • salt and freshly ground black pepper

  1. Cut the tomatoes in half, remove the seeds and dice the flesh. Place in a serving bowl with the spring onions, coriander, mint, chilies, ground coriander, cumin and lime juice. Stir to combine.
  2. Leave for 30 minutes to allow the flavours to develop. Taste just before serving, adding salt and freshly ground black pepper to taste.
