Healthy Rocket Salad with Bacon and Eggs


    Olive oil is rich in various antioxidants, & lowers the levels of cholesterol. This wonderfully scented Rocket Salad with Bacon Bits & Eggs in Extra Virgin Olive Oil & Balsamic Vinegar makes this a great healthy breakfast treat for the family. You will love the extra crunch coming from the chopped onions which are known to reduce inflammation & heal infections for centuries.     • 80g Arugula / Wild Rocket Salad
    • 1 Hard-Boiled Egg
    • 4 tsp Sunflower Seeds
    • ½ Onion
    • 50g Bacon Bits
    • 6 tbsp Extra Virgin Olive Oil
    • 2 tbsp Balsamic Vinegar
    • Oil for frying bacon


    1. Peel and chop the eggs.
    2. Dice the onion.
    3. Heat oil and fry the bacon till golden brown. Drain and set aside.
    4. Divide wild rocket leaves into 2 serving plates. Throw in chopped onions and drizzle the olive oil and balsamic vinegar.
    5. Top with eggs, bacon and sunflower seeds and serve your Rocket Salad with Bacon Bits and Eggs in Extra Virgin Olive Oil and Balsamic Vinegar!
