Bitter Melon Scrambled Eggs with Chinese Sausage ( 苦瓜腊肠炒蛋 )


    Foodies, here's another quick and easy recipe for those who are always in a hurry, and it's eggi-licious!

    • 5 Eggs
    • ¼ Bitter gourd aka bitter melon
    • ½ Chinese sausage
    • 2 tsp Olive oil
    • Pinch of Salt
    • Dash of light Soy sauce


    1. Rinse bitter gourd and remove skin. Use a spoon to scrap out the insides of the melon. Slice thinly and marinate with pinch of salt for about 15 minutes.
    2. Remove skin from sausage (optional), and dice. Set aside.
    3. Heat oil and fry the melon till cooked, and add sausage. Stir fry till fragrant.
    4. Stir in eggs and add soy sauce. Scramble well. Timing depends when how runny you want your eggs to be.
