A fresh salad to complement a main dish.

    • 1 large Carrot grated.
    • 1 Cucumber seeds and skin removed and Grated.
    • 1 tsp Salt. Plus Salt to taste.
    • 1 or 2 Chilies seeds removed and finely chopped use more if you like it hot.
    • 1 tsp Sugar.
    • 1 ½ Tbs Vinegar.
    • 1½ Tbs Water.


    1. Place the grated Cucumber in a bowl sprinkle 1 Tsp salt over it rub it in and set aside. ,
    2. In a separate bowl put the grated carrot
    3. in a small bowl mix Vinegar, Water, Sugar, and add Salt to taste.
    4. After 5 mins Rinse the salt from the Cucumber and then squeeze out the water
    5. Mix the Cucumber in with the Carrot and Chilies pore over the Vinegar dressing and mix together serve on the side.
