Mini lotus root burgers

    This dish has an interesting presentation. We bought too much lotus root the other day and so struck on the idea of doing this!

    • 200g lotus root, sliced into 10 pieces
    • 100g minced pork/chicken
    • 50g prawns, chopped
    • 1 clove garlic, minced
    • 1/2 stalk spring onion, chopped
    • 1 tsp light soy sauce
    • A dash of pepper
    • 1 tsp rice wine


    1. Mix together the minced meat, prawns garlic and spring onion. Marinade the mixture with light soy sauce, pepper and rice wine for about 15 minutes.
    2. Take a piece of lotus root and scoop a small amount of the mixture on it.
    3. Take another piece of lotus root and place on top of the mixture, making a small “burger”.
    4. Pan-fry in a hot oiled pan under low heat until browned on both sides.
