    About this recipe: This is a good one-dish meal to cook if you are busy. Pumpkin is already very fragrant but the addition of the shrimp and mushrooms make it even more fragrant.

    Ingredients

    • 2 shallots, sliced
    • 1.5 tbsp sesame oil
    • 2 dried mushrooms, soaked until soft, cubed
    • A small handful dried shrimps
    • 200g pork belly, sliced
    • 200g pumpkin, cubed
    • 1 cup uncooked rice, washed
    • 1.5 tbsp light soy sauce
    • A pinch of salt
    • A dash of pepper
    • 1 cup water

    Directions

    1. Fry the shallots in sesame oil in a large wok under medium heat until fragrant.
    2. Add in mushrooms and dried shrimps and fry until slightly browned. Add in the pork belly and fry for about 3 minutes.
    3. Add in the pumpkins and stir-fry for about 5 minutes. Add in the rice and stir-fry for another 5 minutes.
    4. Pour the rice and pumpkin mixture into a rice cooker. Add 1 cup of water and cook. Serve hot.
