    About this recipe: Bittergourd isn't the easiest vegetable to cook as it is so bitter! This is one of the classic combinations - bittergourd and egg.

    Ingredients

    • 1 bittergourd
    • Salt to taste
    • 1 clove garlic, chopped
    • 1 egg, beaten

    Directions

    1. Slice the bittergourd and massage it with salt. Leave it for 5 minutes and then rinse it with water.
    2. Fry the garlic in a hot oiled pan under medium heat until it starts to brown. Add in the bittergourd and stir-fry until very soft.
    3. Add in the egg and stir-fry quickly to mix well. Cook until the eggs are firm but stick onto the bittergourd. Serve.
