    About this recipe: This is a Filipino dish of brinjals and eggs. Fragrant and yummy!

    Ingredients

    • 1 brinjal
    • 1 egg
    • 1 stalk spring onion, chopped
    • Salt to taste
    • A dash of pepper

    Directions

    1. Roast the brinjal in a Happy Call Pan until the skin is brown. Remove from pan. Peel off the skin and flatten.
    2. Mix together the egg, spring onion, salt and pepper.
    3. Dip the brinjal into the egg and pan-fry until golden-brown on both sides. Serve.
