About this recipe:
This is a Filipino dish of brinjals and eggs. Fragrant and yummy!
1 stalk spring onion, chopped
Salt to taste
A dash of pepper
- Roast the brinjal in a Happy Call Pan until the skin is brown. Remove from pan. Peel off the skin and flatten.
- Mix together the egg, spring onion, salt and pepper.
- Dip the brinjal into the egg and pan-fry until golden-brown on both sides. Serve.
