Tau Suan (豆爽)
It is hard to get a good cheap bowl of this anymore so I decided to try making it. It is either too thick or too thin or too sweet.

200g split green beans, soaked overnight
A few pandan leaves, knotted
150g brown sugar
3-4 tbsp sweet potato powder
2 youtiao, cut into smaller pieces
- Steam the split green beans until it is soft and powdery when crushed.
- Boil the water, pandan leaves and brown sugar.
- When the sugar has dissolved, add the green beans and stir.
- Add the sweet potato powder and stir. Add more water to get the thickness you want. Cook until the mixture thickens. Serve.
