Tau Suan (豆爽)

    It is hard to get a good cheap bowl of this anymore so I decided to try making it. It is either too thick or too thin or too sweet.

    • 200g split green beans, soaked overnight
    • A few pandan leaves, knotted
    • 500ml water
    • 150g brown sugar
    • 3-4 tbsp sweet potato powder
    • 2 youtiao, cut into smaller pieces


    1. Steam the split green beans until it is soft and powdery when crushed.
    2. Boil the water, pandan leaves and brown sugar.
    3. When the sugar has dissolved, add the green beans and stir.
    4. Add the sweet potato powder and stir. Add more water to get the thickness you want. Cook until the mixture thickens. Serve.
