Pan-fried brinjal

    We tried to pan-fry brinjal as well as deep-fry brinjal. We all thought that it tasted better deep-fried.

    • 1 egg, beaten
    • Salt to taste
    • 2 tbsp oil
    • 1 bringal, cut horizontally in half
    • Fried shallots for garnish
    • 1 tomato, sliced


    1. Mix egg and salt.
    2. Heat a pan and oil it with 2 tbsp of oil.
    3. Dip the brinjal into the egg mixture. Place it on the pan cut side facing down and fry it until the egg mixture is set. Use a spatula to prevent it from sticking.
    4. Flip it over and fry on the other side. Fry until the brinjal is soft and the cut side is browned. Serve with shallots as garnish and with sliced tomatoes.
